Ingredients

  • 2 large eggplants (about 2 lbs total), sliced ½-inch thick
  • 1 jar Albanese's Finest Original Marinara (24 oz)
  • 2 cups shredded mozzarella (or 8 oz fresh mozzarella, sliced)
  • ½ cup grated Parmigiano-Reggiano
  • 2 eggs, beaten
  • 1 cup Italian breadcrumbs
  • ½ cup all-purpose flour
  • 2 tsp dried oregano
  • 1 tsp garlic powder
  • Olive oil for frying
  • Fresh basil
  • Kosher salt

Instructions

  1. 1Arrange eggplant slices on a wire rack or paper towels. Sprinkle generously with kosher salt on both sides. Let sit 30–45 minutes — you'll see moisture bead on the surface. Pat completely dry with paper towels. This removes bitterness and prevents soggy eggplant.
  2. 2Three shallow bowls: flour seasoned with salt and pepper, beaten eggs, and breadcrumbs mixed with Parmigiano, oregano, and garlic powder.
  3. 3Working one slice at a time: dredge in flour, dip in egg, press firmly into breadcrumbs. Make sure every surface is coated.
