Ingredients

  • 1 lb penne rigate (the ridges matter — they grip the sauce)
  • 1 jar Albanese's Finest Vodka Mascarpone sauce (24 oz)
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 4 oz pancetta, diced (optional)
  • ¼ tsp crushed red pepper flakes
  • Fresh basil
  • Freshly grated Parmigiano-Reggiano
  • Kosher salt
  • Reserved pasta water

Instructions

  1. 1In a wide skillet over medium heat, cook diced pancetta until crispy and the fat has rendered, about 5 minutes. Remove and set aside. Keep the fat in the pan.
  2. 2Add olive oil to the pan. Add minced garlic and red pepper flakes. Cook over medium heat, stirring, until garlic is fragrant and just golden — about 90 seconds.
  3. 3Pour in the Vodka Mascarpone sauce. Stir to combine. Simmer over medium-low heat for 6–8 minutes, stirring occasionally. The sauce will thicken slightly and deepen in color.
  4. 4Boil penne in heavily salted water until al dente. Reserve 1 cup of pasta water before draining.
  5. 5Add drained penne to the sauce. Toss over medium heat, adding pasta water a splash at a time until the sauce coats every piece of pasta glossily. Return crispy pancetta to the pan.
  6. 6Plate immediately. Top with torn fresh basil and a generous amount of Parmigiano-Reggiano.

Pro Tips

Use penne rigate, not smooth penne.: The ridges on rigate grip the creamy sauce and hold it on the pasta. Smooth penne lets the sauce slide off.
Don't rush the simmer.: Those 6–8 minutes of simmering concentrate the sauce and develop the flavor. A quick heat-and-serve won't give you the same depth.
Pasta water is non-negotiable.: The starchy water is what makes the sauce cling to the pasta instead of pooling at the bottom of the bowl.

Authentic Italian Gourmet Pasta Sauce. No Added Sugar. Ever.

Penne alla vodka became a phenomenon in the 1980s and never left. There's a reason: the combination of tomato, cream, and a splash of vodka creates a sauce that's more than the sum of its parts — bright and rich at the same time, with a depth that plain tomato sauce can't match.

Albanese's Finest Vodka Mascarpone takes this classic to its natural conclusion. Real mascarpone (not cream, not a substitute — actual Italian mascarpone cheese) combined with premium tomatoes and zero added sugar. The result is the authentic Italian gourmet pasta sauce that makes penne alla vodka taste the way it was always meant to.

The Vodka Question

People always ask: does the vodka actually matter? Yes — but not for the reason you think. The vodka doesn't add flavor. It acts as an emulsifier, helping the fat from the cream and the water from the tomatoes bind together into a unified, silky sauce. Without it, the sauce can separate. With it, everything stays together in that signature creamy-tomato harmony.

Since the vodka is already incorporated into Albanese's Finest Vodka Mascarpone sauce, you get all the benefit without measuring out a shot at 6pm on a Tuesday.

  • 1 lb penne rigate (the ridges matter — they grip the sauce)
  • 1 jar Albanese's Finest Vodka Mascarpone sauce (24 oz)
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 4 oz pancetta, diced (optional)
  • ¼ tsp crushed red pepper flakes
  • Fresh basil
  • Freshly grated Parmigiano-Reggiano
  • Kosher salt
  • Reserved pasta water

Step 1 — Cook the pancetta (optional). In a wide skillet over medium heat, cook diced pancetta until crispy and the fat has rendered, about 5 minutes. Remove and set aside. Keep the fat in the pan.

Step 2 — Sauté garlic and pepper flakes. Add olive oil to the pan. Add minced garlic and red pepper flakes. Cook over medium heat, stirring, until garlic is fragrant and just golden — about 90 seconds.

Step 3 — Add the sauce. Pour in the Vodka Mascarpone sauce. Stir to combine. Simmer over medium-low heat for 6–8 minutes, stirring occasionally. The sauce will thicken slightly and deepen in color.

Step 4 — Cook the penne. Boil penne in heavily salted water until al dente. Reserve 1 cup of pasta water before draining.

Step 5 — Combine. Add drained penne to the sauce. Toss over medium heat, adding pasta water a splash at a time until the sauce coats every piece of pasta glossily. Return crispy pancetta to the pan.

Step 6 — Serve. Plate immediately. Top with torn fresh basil and a generous amount of Parmigiano-Reggiano.

Use penne rigate, not smooth penne. The ridges on rigate grip the creamy sauce and hold it on the pasta. Smooth penne lets the sauce slide off.

Don't rush the simmer. Those 6–8 minutes of simmering concentrate the sauce and develop the flavor. A quick heat-and-serve won't give you the same depth.

Pasta water is non-negotiable. The starchy water is what makes the sauce cling to the pasta instead of pooling at the bottom of the bowl.

Variations

Frequently Asked Questions

Can I make this Penne Alla Vodka ahead of time?

Yes — this dish reheats beautifully. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop with a splash of water or pasta water to loosen the sauce.

What makes Albanese's Finest Vodka Mascarpone Sauce different?

It's made with real mascarpone cheese and heavy cream — not a cream substitute — combined with premium tomatoes and absolutely no added sugar. The result is a sauce that's simultaneously rich and bright, with the authentic flavor of a restaurant-quality vodka sauce.
