Pro Tips
Bold Rub It Seasoning. Crispy. Ready in 25 Minutes.
Rub It was made for exactly this kind of recipe. The bold, savory seasoning coats the shrimp perfectly, and when those shrimp hit a hot skillet, the flavor locks in fast. Fold them into a tortilla with melted cheese and you've got a quesadilla that tastes like it came from a real kitchen — not a fast-food window.

- 2 tbsp olive oil or butter
- 4 large flour tortillas

- ½ red onion, thinly sliced
- 1 jalapeño, sliced (optional)
- Sour cream, for serving
- Fresh salsa or pico de gallo, for serving

Step 1 — Season the shrimp. Toss shrimp with Rub It Seasoning until evenly coated.
Step 2 — Cook the shrimp. Heat 1 tbsp oil in a skillet over medium-high heat. Cook shrimp 1–2 minutes per side until pink and cooked through. Set aside.
Step 3 — Sauté the vegetables. In the same skillet, sauté bell pepper and onion with a pinch of Rub It until softened, about 3 minutes.
Step 4 — Build the quesadilla. Lay a tortilla flat. Sprinkle half with cheese, then top with shrimp, peppers, onion, and jalapeño if using. Fold tortilla in half.
Step 5 — Cook the quesadilla. Cook quesadilla in a lightly oiled skillet over medium heat, 2–3 minutes per side, until golden and crispy.
Step 6 — Slice and serve. Slice into wedges and serve with sour cream, salsa, cilantro, and lime.
Don't overcook the shrimp. Shrimp cook fast — 1–2 minutes per side is all they need. Overcooked shrimp turn rubbery. Pull them off the heat as soon as they turn pink.
Medium heat for the quesadilla. High heat burns the tortilla before the cheese melts. Medium heat gives you a golden, crispy exterior and perfectly melted cheese inside.
Press lightly while cooking. A light press with a spatula while the quesadilla cooks helps the cheese melt evenly and keeps the tortilla flat.
