There's a reason Sunday Gravy has been passed down through Italian-American families for generations. It's not just the flavor — it's the ritual. The pot on the stove by 9 AM. The whole house filling with the smell of slow-simmered tomatoes, garlic, and rich, savory meat. The family gathering around the table hours later, knowing something special is coming.

Albanese's Finest Meat Sauce is an authentic Italian gourmet pasta sauce with no added sugar — small-batch, founder-made by Darrin Albanese from a real Italian-American family recipe. Use it as your base and you get all of that depth and richness without spending hours building a sauce from scratch. The authentic Italian flavor is already there.

What You'll Need

  • 2 jars of Albanese's Finest Meat Sauce
  • 1 lb Italian sausage (sweet or hot — your call)
  • 1 lb pork ribs or braciole (optional, for extra richness)
  • 1 lb rigatoni or pappardelle
  • 1 medium onion, finely diced
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/2 cup dry red wine
  • Fresh basil leaves
  • Freshly grated Pecorino Romano or Parmigiano-Reggiano
  • Salt and black pepper to taste

How to Make It

Step 1: Brown the Meat

Heat olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Season your sausage and ribs with salt and pepper, then brown them on all sides — about 3–4 minutes per side. Don't rush this step. That golden crust is where the flavor lives. Remove the meat and set aside.

Step 2: Build the Base

In the same pot, reduce heat to medium and add your diced onion. Cook until softened and translucent, about 5 minutes. Add the garlic and cook for another minute until fragrant. Pour in the red wine and scrape up any browned bits from the bottom of the pot — that's pure flavor.

Step 3: Add the Sauce

Pour in both jars of Albanese's Finest Meat Sauce. Stir to combine with the onion and garlic base. Nestle the browned meat back into the pot, making sure it's submerged in the sauce.

Step 4: Low and Slow

Bring the sauce to a gentle simmer, then reduce heat to low. Cover partially and let it cook for at least 1.5 to 2 hours, stirring occasionally. The longer it goes, the deeper the flavor gets. If you have the time, 3 hours is even better.

Step 5: Cook the Pasta

About 20 minutes before you're ready to eat, bring a large pot of heavily salted water to a boil. Cook your pasta until just al dente — it will finish cooking in the sauce. Reserve 1 cup of pasta water before draining.

Step 6: Bring It Together

Remove the meat from the sauce and slice or shred it. Toss the drained pasta directly into the pot with the sauce, adding a splash of pasta water if needed to loosen things up. Plate generously, top with the sliced meat, fresh basil, and a heavy hand of grated cheese.

The Secret Is the Sauce

A Sunday Gravy is only as good as the sauce you start with. That's why we built Albanese's Finest Meat Sauce the way we did — small-batch, no added sugar, real ingredients, and a depth of flavor that takes most homemade sauces hours to develop.

When you start with a sauce this good, every recipe becomes something special.
