Ingredients

  • 1 lb rigatoni

  • 4 oz pancetta or guanciale, diced (optional but excellent)
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • ¼ cup dry white wine (optional)
  • Fresh basil
  • Freshly grated Parmigiano-Reggiano
  • Kosher salt & cracked black pepper
  • Reserved pasta water

Instructions

  1. 1If using, cook diced pancetta in a wide skillet over medium heat until the fat renders and the edges crisp, about 5 minutes. Remove with a slotted spoon and set aside. Leave the fat in the pan.
  2. 2Add olive oil to the pan (or use the pancetta fat). Add minced garlic and cook over medium heat until fragrant and just golden, about 90 seconds.
